Our story

A small Texas roastery with a stubborn belief that great coffee should taste good without anything added.

Founded 2019

It started in a 600-square-foot warehouse.

Toby Daniels opened LeanBrew in a tucked-away corner of San Antonio's east side after spending nearly a decade in the specialty coffee industry — first as a barista, then a cafe manager, then a green coffee buyer. The mission was simple: roast coffee so clean and naturally sweet that customers wouldn't reach for the sugar jar.

Six years later, that mission hasn't budged. We've grown into a 2,200-square-foot roastery on Weekley Street, we work with eleven family farms across four countries, and we ship to all 50 states. But every bag still goes through the same quality steps: cupped on arrival, profiled by hand, roasted in small batches on our 1957 Probat drum roaster, and packed within hours of cooling.

What we believe

Five things we won't compromise on.

1. Origin transparency

Every bag tells you the farm, region, elevation, processing method, and varietal. If we can't trace it, we don't roast it.

2. Fair pricing for growers

We pay an average of 38% over Fair Trade minimums and visit our partner farms at least once every two years.

3. Freshness on the bag

The roast date is printed clearly on every bag, not hidden behind a "best by." If it isn't fresh, you shouldn't drink it.

4. Light to medium only

We don't roast dark. Dark roasting masks the bean. Our profiles preserve the natural sugars that make great coffee taste sweet on its own.

5. A real human on the phone

Call our roastery during business hours and a real person picks up. Email and you'll hear back within one business day.

6. Doing less, better

We'd rather offer twelve genuinely great lots than fifty mediocre ones. Our menu stays small on purpose.

Visit us

The roastery is open to the public.

Drop by the production floor Tuesday through Saturday. We host free public cuppings every Saturday at 10am — first come, first seated.
